Ingredients
- 1 pound ground turkey
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (10 ounce) can diced tomatoes with green chilies, drained
- 1 cup corn kernels
- 1 (8 ounce) package jumbo shells
- 1 cup Mexican-style cheese blend, shredded
- 1/4 cup cilantro, chopped
Directions
- Preheat the oven to 375 degrees F (190 degrees C).
- In a large skillet over medium-high heat, cook the ground turkey until it is no longer pink. Drain off any excess fat.
- Stir in the chili powder, cumin, garlic powder, onion powder, salt and black pepper. Add the black beans, diced tomatoes and corn.
- Simmer for 10 minutes, stirring occasionally.
- Meanwhile, bring a large pot of lightly salted water to a boil. Add the jumbo shells and cook for 8 minutes; drain.
- Spread 1/4 cup of the Mexican-style cheese blend in the bottom of a 9x13 inch baking dish.
- Fill each shell with the ground turkey mixture and place in the baking dish. Sprinkle with the remaining cheese blend and the chopped cilantro.
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
