Ingredients
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped fennel
- 2 cloves garlic, minced
- 3 cups vegetable broth
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon ground pepper
- 1/4 teaspoon salt
- 1/4 cup chopped fresh parsley
Directions
- Heat the olive oil in a large saucepan over medium heat.
- Add the onion and fennel and cook until softened, about 5 minutes.
- Add the garlic and cook for 1 minute.
- Add the broth, thyme, oregano, pepper, and salt and bring to a boil.
- Reduce heat to low and simmer for 15 minutes.
- Add the parsley and simmer for an additional 5 minutes.
- Serve hot.
