Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped fennel
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground pepper
  • 1/4 teaspoon salt
  • 1/4 cup chopped fresh parsley

Directions

  1. Heat the olive oil in a large saucepan over medium heat.
  2. Add the onion and fennel and cook until softened, about 5 minutes.
  3. Add the garlic and cook for 1 minute.
  4. Add the broth, thyme, oregano, pepper, and salt and bring to a boil.
  5. Reduce heat to low and simmer for 15 minutes.
  6. Add the parsley and simmer for an additional 5 minutes.
  7. Serve hot.
