Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup finely chopped almonds
  • 1/2 cup white chocolate chips

Directions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, beat the butter and sugar until creamy.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Add the vanilla and mix until incorporated.
  6. Gradually add the flour mixture to the butter mixture, stirring until fully incorporated.
  7. Stir in the almonds and white chocolate chips.
  8. Divide the dough in half and, on a lightly floured surface, roll each half into a log about 10 inches (25 cm) long and 2 inches (5 cm) wide.
  9. Place the logs on a baking sheet and bake for 25 minutes, or until lightly golden.
  10. Remove from the oven and let cool for 10 minutes.
  11. Cut the logs into slices about 1/2 inch (1 cm) thick.
  12. Place the slices back on the baking sheet and bake for an additional 10 minutes.
  13. Remove from the oven and let cool completely.
