Ingredients
- 4 ears of corn, husked
- 1/4 cup mayonnaise
- 1/2 teaspoon chili powder
- 1/4 cup chopped fresh cilantro
- 1/2 teaspoon garlic powder
- 1/4 cup crumbled cotija cheese
- 1/2 teaspoon smoked paprika
- Juice of 1 lime
- Salt and pepper, to taste
Directions
- Preheat the grill to medium-high heat.
- Grill the corn for 8-10 minutes, turning occasionally until charred and tender.
- In a small bowl, combine the mayonnaise, chili powder, garlic powder, smoked paprika, and lime juice. Mix until combined.
- Spread the mayonnaise mixture over the grilled corn and top with the cilantro and cotija cheese.
- Season with salt and pepper, to taste.
- Serve warm.
