Ingredients
- 1 package (16 ounces) rotini pasta
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (14.5 ounces) corn, drained
- 1 can (4 ounces) diced green chiles
- 1/2 cup red onion, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup cilantro, chopped
- 1/3 cup olive oil
- 1/4 cup lime juice
- 2 tablespoons honey
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Directions
- Cook the rotini according to package directions. Drain and rinse with cold water. Place in a large bowl.
- Add black beans, corn, green chiles, red onion, red bell pepper, and cilantro to the bowl and mix together.
- In a small bowl, mix together the olive oil, lime juice, honey, cumin, chili powder, salt, and pepper to create the dressing. Pour over the pasta salad and mix together.
- Refrigerate for at least 1 hour before serving.
