Ingredients
- 1 cup farro, rinsed
- 2 cups water
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1 small red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- Salt and pepper, to taste
Directions
- In a medium saucepan, combine the rinsed farro and water. Bring to a boil, then reduce heat and simmer uncovered for about 15-20 minutes until tender. Drain any excess water and let it cool.
- In a large bowl, combine the cooked farro, diced cucumber, diced red bell pepper, sliced red onion, cherry tomatoes, Kalamata olives, crumbled feta cheese, chopped parsley, and chopped mint.
- In a small bowl, whisk together the extra virgin olive oil, lemon juice, minced garlic, salt, and pepper. Pour the dressing over the salad ingredients and toss well to combine.
