Ingredients
- 1 gallon vegetable broth
- 1 cup sea salt
- 1 tablespoon crushed dried rosemary
- 1 tablespoon dried sage
- 1 tablespoon dried thyme
- 1 tablespoon dried savory
- 1 gallon ice water
- 1 onion, quartered
- 1 lemon, quartered
- 6 cloves garlic, crushed
- 2 tablespoons black peppercorns
- 1 tablespoon allspice berries
Directions
- In a large stockpot, combine the vegetable broth, sea salt, rosemary, sage, thyme, and savory. Bring to a boil, stirring to dissolve the salt and spices. Remove from heat and let cool to room temperature.
- Stir in the ice water. Place the turkey, breast down, into the brine. Make sure the cavity gets filled. Place the pot in the refrigerator and brine for 24 hours.
