Ingredients
- 2 cans of chickpeas, rinsed and drained
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
Directions
- In a large bowl, combine the chickpeas, olive oil, red wine vinegar, garlic, oregano, basil, thyme, salt and pepper.
- Stir until the chickpeas are evenly coated with the marinade.
- Cover the bowl and refrigerate for at least 3 hours to overnight.
- Serve chilled or at room temperature.
