Ingredients

  • 2 cans of chickpeas, rinsed and drained
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Directions

  1. In a large bowl, combine the chickpeas, olive oil, red wine vinegar, garlic, oregano, basil, thyme, salt and pepper.
  2. Stir until the chickpeas are evenly coated with the marinade.
  3. Cover the bowl and refrigerate for at least 3 hours to overnight.
  4. Serve chilled or at room temperature.
