1 pound (450 g) of medium shrimp, peeled and deveined
3 cloves of garlic, minced
1 tablespoon (15 ml) of fish sauce
2 tablespoons (30 ml) of soy sauce
1 tablespoon (15 ml) of brown sugar
2 tablespoons (30 ml) of vegetable oil
1 teaspoon (5 ml) of dried red chili flakes
2 eggs, lightly beaten
4 ounces (115 g) of rice noodles
4 ounces (115 g) of bean sprouts
2 tablespoons (30 ml) of lime juice
2 tablespoons (30 ml) of chopped fresh cilantro
2 tablespoons (30 ml) of chopped peanuts
Directions
In a medium bowl, combine the shrimp, garlic, fish sauce, soy sauce, and brown sugar. Stir to combine and set aside.
Heat the vegetable oil in a large skillet over medium-high heat. Add the shrimp mixture and cook for 2-3 minutes, or until the shrimp is cooked through.
Add the chili flakes and eggs to the skillet and stir to combine. Cook for another minute, or until the eggs are cooked through.
Add the noodles and bean sprouts to the skillet and stir to combine. Cook for another 2-3 minutes, or until the noodles are softened.
Remove from the heat and stir in the lime juice, cilantro, and peanuts. Serve hot.
