Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 (15-ounce) can diced tomatoes
  • 1/2 cup water
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • 3 tablespoons butter, melted

Directions

  1. Preheat oven to 400°F. Grease a 9x13-inch baking dish.
  2. In a large skillet over medium-high heat, cook the ground beef until browned, about 5 minutes. Add the onion, bell pepper, garlic, chili powder, cumin, oregano, salt, and black pepper and cook until the vegetables are soft, about 5 minutes more. Add the black beans, corn, diced tomatoes, and water and simmer for 10 minutes.
  3. In a medium bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together the buttermilk, eggs, and melted butter. Add the wet ingredients to the dry ingredients and mix until just combined.
  4. Spread the beef mixture in the prepared baking dish. Top with the cornbread mixture. Bake until the top is golden brown and a toothpick inserted into the center comes out clean, about 30 minutes.
  5. Let cool for 10 minutes before serving.
