Ingredients

  • 2 lbs pork shoulder, cubed
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons ground cumin
  • 2 tablespoons chili powder
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 1/4 cup white vinegar
  • 1/2 cup lard

Directions

  1. In a large bowl, combine the pork, olive oil, onion, garlic, cumin, chili powder, oregano, salt, and pepper. Mix until the pork is well-coated.
  2. In a separate bowl, mix together the orange juice, lime juice, and vinegar. Pour this mixture over the pork and stir to coat.
  3. Cover the bowl and refrigerate for at least 30 minutes, or overnight.
  4. Remove the pork from the refrigerator and discard the marinade.
  5. Heat the lard in a large skillet over medium-high heat.
  6. Add the pork cubes to the skillet and cook for 6-8 minutes, stirring often, until the pork is golden brown and cooked through.
  7. Serve the carnitas with your favorite toppings and sides.
