Ingredients
- 2 lbs pork shoulder, cubed
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons ground cumin
- 2 tablespoons chili powder
- 1 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup orange juice
- 1/4 cup lime juice
- 1/4 cup white vinegar
- 1/2 cup lard
Directions
- In a large bowl, combine the pork, olive oil, onion, garlic, cumin, chili powder, oregano, salt, and pepper. Mix until the pork is well-coated.
- In a separate bowl, mix together the orange juice, lime juice, and vinegar. Pour this mixture over the pork and stir to coat.
- Cover the bowl and refrigerate for at least 30 minutes, or overnight.
- Remove the pork from the refrigerator and discard the marinade.
- Heat the lard in a large skillet over medium-high heat.
- Add the pork cubes to the skillet and cook for 6-8 minutes, stirring often, until the pork is golden brown and cooked through.
- Serve the carnitas with your favorite toppings and sides.
