Ingredients
- 1 cup macapuno (coconut preserves)
- 1 cup butter, softened
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 eggs
- 2 cups sugar
- 1 teaspoon vanilla extract
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a medium bowl, mix together the flour, baking powder and salt. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually blend in the dry ingredients. Spread the batter into the prepared pan.
- Spread the macapuno over the top. Bake for 25 to 30 minutes, or until golden brown. Cool before cutting into bars.
