Ingredients

  • 1 cup macapuno (coconut preserves)
  • 1 cup butter, softened
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 2 cups sugar
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  2. In a medium bowl, mix together the flour, baking powder and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually blend in the dry ingredients. Spread the batter into the prepared pan.
  5. Spread the macapuno over the top. Bake for 25 to 30 minutes, or until golden brown. Cool before cutting into bars.
