Ingredients

  • 1 medium head of cauliflower
  • 4 eggs

  • 1/2 pound ground sausage
  • 1/2 onion, diced

Directions

  1. Preheat your oven to 400°F (200°C).
  2. Remove the stem and leaves from the cauliflower and cut it into florets. Place the florets in a food processor and pulse until they resemble rice.
  3. Transfer the cauliflower rice to a large microwave-safe bowl and microwave on high for 5 minutes. Allow it to cool slightly.
