Ingredients
- 4 slices of bacon, diced
- 1 onion, diced
- 1 green bell pepper, diced
- 4 cups of diced potatoes
- 1 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 4 eggs
- Fresh chopped parsley for garnish
Directions
- In a large skillet, cook the bacon over medium heat until crispy. Remove from skillet and set aside.
- In the same skillet, add the diced onion, bell pepper, and potatoes. Cook until the potatoes are tender and golden brown, about 15 minutes.
- Stir in the paprika, garlic powder, salt, and pepper. Add the cooked bacon back to the skillet and mix well.
