Ingredients

  • 4 slices of bacon, diced
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 4 cups of diced potatoes
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 4 eggs
  • Fresh chopped parsley for garnish

Directions

  1. In a large skillet, cook the bacon over medium heat until crispy. Remove from skillet and set aside.
  2. In the same skillet, add the diced onion, bell pepper, and potatoes. Cook until the potatoes are tender and golden brown, about 15 minutes.
  3. Stir in the paprika, garlic powder, salt, and pepper. Add the cooked bacon back to the skillet and mix well.
  4. Create 4 wells in the potato mixture and crack an egg into each well. Cover the skillet and cook until the eggs are set to your liking, about 5 minutes for runny yolks.
  5. Sprinkle the shredded cheddar cheese over the skillet and cover again until the cheese is melted.
