The lentils are cooked until tender and combined with rice, creating a hearty and nutritious dish. Serve this Mujadarra with a dollop of yogurt or a fresh salad for a complete and satisfying meal.
Ingredients
- 1 cup brown lentils
- 1 cup basmati rice
- 3 medium onions, thinly sliced
- 4 tablespoons olive oil
- 1 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cinnamon powder
- Salt, to taste
- Water, as needed
Directions
- Rinse the lentils under cold water and place them in a saucepan. Add enough water to cover the lentils and bring to a boil. Reduce the heat to low and simmer until the lentils are tender, about 20-25 minutes. Drain any excess water and set aside.
- In a separate saucepan, rinse the rice under cold water. Add 2 cups of water and bring to a boil. Reduce the heat to low, cover, and cook for 15-20 minutes or until the rice is fluffy and cooked through. Remove from heat and set aside.
- In a large frying pan, heat the olive oil over medium heat. Add the sliced onions and cook until golden brown and caramelized, stirring occasionally. Remove half of the caramelized onions and set aside for garnishing.
- To the remaining onions in the pan, add the cumin powder, coriander powder, turmeric powder, cinnamon powder, and salt. Stir well to combine and cook for another minute to toast the spices.
- Add the cooked lentils to the pan with the spiced onions and mix well. Cook for a few minutes to allow the flavors to meld together.
- Add the cooked rice to the lentil mixture and gently fold everything together until well combined. Cook for another 2-3 minutes to heat through.
- Serve the Mujadarra hot, garnished with the reserved caramelized onions. Enjoy with a side of yogurt or a fresh salad.
