Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup candied fruit, chopped

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
  2. In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, and salt; stir into the creamed mixture alternately with the milk.
  3. Fold in the candied fruit. Pour batter into prepared pan.
  4. Bake at 350 degrees F (175 degrees C) for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  5. Cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
