Ingredients

  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cooked chorizo, crumbled
  • 1/2 cup goat cheese, crumbled
  • 1/2 cup Monterey Jack cheese, grated
  • 1/4 cup fresh cilantro, chopped
  • Tortilla chips, for serving

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onion, bell pepper, jalapeno, and garlic. Cook for 5 minutes, stirring occasionally.
  3. Stir in the cumin, chili powder, salt, and pepper. Cook for 1 minute.
  4. Stir in the chorizo and cook for 1 minute.
  5. Reduce the heat to low and stir in the goat cheese, Monterey Jack cheese, and cilantro.
  6. Cook for 2 minutes, stirring occasionally.
  7. Serve the queso fundido warm with tortilla chips.
