Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound beef chuck, cut into 1-inch cubes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 3 tablespoons tomato paste
  • 1 (4 ounce) can diced green chilies
  • 1 cup beef broth
  • 1/2 cup water

Directions

  1. Heat oil in a large pot over medium heat. Add beef cubes and cook until browned on all sides, about 5 minutes. Add onion and garlic and cook until onion is softened, about 5 minutes more.
  2. Stir in chili powder, cumin, oregano, salt, and pepper. Add tomatoes, tomato paste, chilies, beef broth, and water. Bring to a boil, then reduce heat to low and simmer for 30 minutes, stirring occasionally.
  3. Serve hot.
