In a medium bowl, whisk together the flour, sugar, baking powder and salt. In a separate bowl, whisk together the milk, vegetable oil, vanilla extract and cinnamon. Pour the wet ingredients into the dry ingredients and whisk until combined.
Heat a large skillet over medium-high heat. When the skillet is hot, add the butter and swirl it around the pan. Using a 1/4 cup measure, scoop the pancake batter into the skillet and cook for 2-3 minutes, or until the edges of the pancake begin to brown. Flip the pancake and cook for another 1-2 minutes, or until the pancake is cooked through.
Repeat with the remaining batter, adding more butter to the pan as needed. Serve the pancakes warm with maple syrup, fresh fruit, whipped cream and/or powdered sugar.
