2 tablespoons olive oil
1 small onion, diced
2 cloves garlic, minced
2 carrots, diced
2 stalks celery, diced
1 red bell pepper, diced

Directions
Heat the olive oil in a large pot over medium heat.
Add the onion, garlic, carrots, celery, and red bell pepper. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
Add the ginger and coriander and cook, stirring, for 1 minute.
Add the vegetable broth, diced tomatoes, black beans, and corn. Bring to a simmer and cook for 10 minutes.
Add the spinach and cook until wilted, about 1 minute.
Season with salt and pepper to taste.
Serve warm, garnished with green onions.
