2 tablespoons olive oil
2 pounds beef short ribs
1 teaspoon dried oregano

Reduce heat to low, cover, and cook for 1 hour.
Uncover and cook for an additional 30 minutes, or until the ribs are tender and the sauce has thickened.
Garnish with chopped fresh parsley before serving.
