1 pound boneless, skinless chicken breasts, cut into cubes
1 tablespoon Jamaican jerk seasoning
1 red onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 teaspoon dried thyme
1/4 teaspoon cayenne pepper
1/2 cup chicken stock
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
Kosher salt and freshly ground black pepper, to taste
1/4 cup chopped fresh parsley leaves
Directions
Set the Instant Pot to the “Saute” setting and heat the olive oil. Add the chicken and jerk seasoning and cook until the chicken is golden brown, about 4 minutes.
Add the onion, garlic, bell pepper, thyme, and cayenne pepper and saute for another 2 minutes.
Add the chicken stock, cover, and cook on the “Manual” setting for 15 minutes. Release the pressure and remove the lid.
Stir in the cream and Parmesan cheese and season with salt and pepper, to taste. Stir in the parsley.
Serve the chicken Alfredo over cooked pasta or rice.
