Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into cubes
- 1 tablespoon Jamaican jerk seasoning
- 1 red onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon dried thyme
- 1/4 teaspoon cayenne pepper
- 1/2 cup chicken stock
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Kosher salt and freshly ground black pepper, to taste
- 1/4 cup chopped fresh parsley leaves
Directions
- Set the Instant Pot to the “Saute” setting and heat the olive oil. Add the chicken and jerk seasoning and cook until the chicken is golden brown, about 4 minutes.
- Add the onion, garlic, bell pepper, thyme, and cayenne pepper and saute for another 2 minutes.
- Add the chicken stock, cover, and cook on the “Manual” setting for 15 minutes. Release the pressure and remove the lid.
- Stir in the cream and Parmesan cheese and season with salt and pepper, to taste. Stir in the parsley.
- Serve the chicken Alfredo over cooked pasta or rice.
