Ingredients

  • 2 chicken breasts
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup sliced mushrooms
  • 1/4 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 cup marsala wine
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon butter
  • 1 tablespoon chopped fresh parsley

Directions

  1. In a shallow dish, combine flour, salt, and black pepper. Dredge the chicken breasts in the flour mixture, shaking off any excess.
  2. Select the sauté function on the Instant Pot and heat the olive oil. Add the chicken breasts and cook until browned on both sides, about 3 minutes per side. Remove the chicken from the Instant Pot and set aside.
  3. Add the mushrooms, onion, and garlic to the Instant Pot. Sauté until the vegetables are softened, about 3 minutes.
  4. Pour in the marsala wine and chicken broth, and scrape the bottom of the pot to release any browned bits. Return the chicken breasts to the Instant Pot.
  5. Close the lid of the Instant Pot and set the vent to sealing position. Select the manual/pressure cook function and set the cooking time to 10 minutes on high pressure.
  6. Once the cooking time is complete, allow for a natural release of pressure for 10 minutes, then carefully switch the vent to the venting position to release any remaining pressure.
  7. Open the lid of the Instant Pot and transfer the chicken breasts to a serving dish. Select the sauté function and stir in the heavy cream and butter. Cook until the sauce thickens slightly, about 2 minutes.
  8. Pour the sauce over the chicken breasts and garnish with chopped parsley. Serve hot with pasta or mashed potatoes.
