Ingredients
- 2 chicken breasts
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup sliced mushrooms
- 1/4 cup diced onion
- 2 cloves garlic, minced
- 1/2 cup marsala wine
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 tablespoon butter
- 1 tablespoon chopped fresh parsley
Directions
- In a shallow dish, combine flour, salt, and black pepper. Dredge the chicken breasts in the flour mixture, shaking off any excess.
- Select the sauté function on the Instant Pot and heat the olive oil. Add the chicken breasts and cook until browned on both sides, about 3 minutes per side. Remove the chicken from the Instant Pot and set aside.
- Add the mushrooms, onion, and garlic to the Instant Pot. Sauté until the vegetables are softened, about 3 minutes.
- Pour in the marsala wine and chicken broth, and scrape the bottom of the pot to release any browned bits. Return the chicken breasts to the Instant Pot.
- Close the lid of the Instant Pot and set the vent to sealing position. Select the manual/pressure cook function and set the cooking time to 10 minutes on high pressure.
- Once the cooking time is complete, allow for a natural release of pressure for 10 minutes, then carefully switch the vent to the venting position to release any remaining pressure.
- Open the lid of the Instant Pot and transfer the chicken breasts to a serving dish. Select the sauté function and stir in the heavy cream and butter. Cook until the sauce thickens slightly, about 2 minutes.
- Pour the sauce over the chicken breasts and garnish with chopped parsley. Serve hot with pasta or mashed potatoes.
- Enjoy your Instant Pot Easy Chicken Marsala!
