Ingredients

  • 2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 3 8-ounce packages of cream cheese, softened
  • 3/4 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract

Directions

  1. Prepare the Instant Pot by greasing the inner pot with nonstick cooking spray.
  2. In a medium bowl, mix together the graham cracker crumbs and melted butter until combined.
  3. Press the crumb mixture into the bottom of the Instant Pot and set aside.
  4. In a large bowl, beat together the cream cheese, sugar, eggs, and vanilla until light and fluffy.
  5. Pour the cream cheese mixture over the crust.
  6. Secure the lid onto the Instant Pot and make sure the steam release valve is set to the ‘sealing’ position.
  7. Select the ‘Manual’ setting and set the timer to 25 minutes.
  8. When the timer is done, allow the pressure to release naturally for 10 minutes before turning the steam release valve to the ‘venting’ position.
  9. Carefully remove the lid and allow the cheesecake to cool for 10 minutes.
  10. Serve with fresh fruit or your favorite topping.
