This Hot German Potato Salad III recipe is a flavorful side dish made with tender boiled potatoes, crispy bacon, onions, and a tangy vinegar dressing. It's the perfect accompaniment to any meal, especially during the summer months when you want to serve a warm potato salad. This classic German recipe is easy to make and is sure to be a crowd-pleaser!

Ingredients

  • 6 medium potatoes
  • 6 slices bacon
  • 1 large onion, chopped
  • 3 tablespoons all-purpose flour
  • 1/2 cup white vinegar
  • 1/4 cup water
  • 1/4 cup white sugar
  • 2 tablespoons Dijon mustard
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley (optional)

Directions

  1. Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to cool slightly. Once cool enough to handle, peel and slice the potatoes.
  2. While the potatoes are cooking, place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, about 10 minutes. Remove the bacon slices, crumble, and set aside, reserving bacon drippings in the skillet.
  3. Add the chopped onion to the skillet with the bacon drippings and cook over medium heat until tender, about 5 minutes. Stir in the flour until well blended. Gradually stir in the vinegar, water, sugar, and Dijon mustard. Season with salt and pepper to taste. Cook and stir over medium heat until thick and bubbly, about 5 minutes.
  4. Add the sliced potatoes to the skillet and toss gently to coat. Cook over medium heat until heated through, about 5 minutes.
  5. Sprinkle the crumbled bacon and chopped parsley (optional) over the potato mixture and toss gently to combine. Serve hot.
