Ingredients

  • 2 pounds fresh tomatoes
  • 2 tablespoons olive oil
  • 1 onion, chopped

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon tomato paste
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped

Directions

  1. Bring a large pot of water to a boil. Score a small 'X' on the bottom of each tomato with a knife. Drop the tomatoes into the boiling water for about 30 seconds, then transfer them to a bowl of ice water. Peel off the tomato skins and chop them into small pieces.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, and cook until they are soft and translucent, about 5 minutes.
  3. Add the chopped tomatoes, dried basil, dried oregano, salt, and black pepper to the skillet. Stir well to combine all the ingredients.
  4. Reduce the heat to low, cover the skillet, and simmer the sauce for about 20 minutes, stirring occasionally.
  5. Stir in the tomato paste, fresh parsley, and fresh basil. Cook for an additional 5 minutes to allow the flavors to meld together.
