- 2 pounds fresh tomatoes
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon tomato paste
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
Directions
- Bring a large pot of water to a boil. Score a small 'X' on the bottom of each tomato with a knife. Drop the tomatoes into the boiling water for about 30 seconds, then transfer them to a bowl of ice water. Peel off the tomato skins and chop them into small pieces.
- Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, and cook until they are soft and translucent, about 5 minutes.
- Add the chopped tomatoes, dried basil, dried oregano, salt, and black pepper to the skillet. Stir well to combine all the ingredients.
- Reduce the heat to low, cover the skillet, and simmer the sauce for about 20 minutes, stirring occasionally.
