  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup bread crumbs
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

  1. Preheat the oven to 375°F (190°C).

  6. Stuff the zucchini halves with the sausage and vegetable mixture, packing it in tightly.
  7. Place the stuffed zucchini on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the filling is golden brown.
  8. Remove from the oven and let it cool for a few minutes before serving.
