Ingredients

  • 8 ounces rice noodles
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 8 ounces chicken breast, thinly sliced
  • 2 tablespoons tamarind paste
  • 2 tablespoons fish sauce
  • 2 tablespoons palm sugar
  • 2 tablespoons lime juice
  • 2 tablespoons soy sauce
  • 2 tablespoons water
  • 2 eggs, lightly beaten
  • 1 cup bean sprouts
  • 4 green onions, chopped
  • 1/4 cup chopped peanuts
  • Lime wedges, for serving

Directions

  1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the sliced chicken breast to the skillet and cook until lightly browned and cooked through, about 5 minutes.
  4. In a small bowl, combine the tamarind paste, fish sauce, palm sugar, lime juice, soy sauce, and water. Stir until the sugar has dissolved.
  5. Push the chicken to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until they are fully cooked.
  6. Add the cooked rice noodles to the skillet and pour the sauce over the noodles. Toss everything together until well coated.
  7. Stir in the bean sprouts and chopped green onions, cooking for an additional 2 minutes until heated through.
  8. Remove the skillet from the heat and sprinkle the chopped peanuts over the top of the Pad Thai.
  9. Serve Dad's Pad Thai hot with lime wedges on the side for squeezing over the dish.
