- 2 tablespoons lime juice
- 2 tablespoons soy sauce
- 2 tablespoons water
- 2 eggs, lightly beaten
- 1 cup bean sprouts
- 4 green onions, chopped
- 1/4 cup chopped peanuts
- Lime wedges, for serving
Directions
- Cook the rice noodles according to the package instructions. Drain and set aside.
- Heat the vegetable oil in a large skillet or wok over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the sliced chicken breast to the skillet and cook until lightly browned and cooked through, about 5 minutes.
