Ingredients
- 1 leftover chicken carcass
- 8 cups water
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 cup frozen peas
Directions
- In a large stockpot, place the chicken carcass and cover with water.
- Add carrots, celery, onion, garlic, bay leaf, salt, pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove the chicken carcass and pick off any remaining meat. Discard bones and return meat to the pot.
