Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup farro
  • 4 cups chicken broth
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

  1. Turn on the Instant Pot and set it to sauté mode. Add the olive oil and heat it up.
  2. Add the diced onion, carrots, celery, and garlic to the pot. Sauté for 2-3 minutes until the vegetables start to soften.
  3. Push the vegetables to the side and add the chicken breasts to the pot. Brown them on both sides for about 2 minutes per side.
  4. Add the farro, chicken broth, thyme, rosemary, salt, and black pepper to the pot. Stir everything together.
  5. Close the Instant Pot lid and set the pressure release valve to the sealing position. Cook on high pressure for 20 minutes.
  6. Once the cooking time is up, allow the Instant Pot to naturally release pressure for 10 minutes. Then, carefully release any remaining pressure using the quick release method.
  7. Open the Instant Pot lid and use two forks to shred the chicken into bite-sized pieces.
  8. Serve the soup hot, garnished with fresh parsley.
