Directions

  1. In a medium saucepan, bring the vegetable broth to a boil. Add the brown rice, reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
  2. While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the diced onion and sauté for 5 minutes or until translucent.
  3. Add minced garlic, diced red and green bell peppers, and jalapeno pepper to the skillet. Cook for an additional 3-4 minutes or until the peppers are tender.
  4. Stir in the rinsed and drained black beans, cumin, paprika, chili powder, salt, and pepper. Cook for another 2-3 minutes or until the beans are heated through.
  5. Once the rice is cooked, add it to the skillet with the black bean and pepper mixture. Stir well to combine all the ingredients. Cook for an additional 2-3 minutes to allow the flavors to meld together.
