Ingredients

  • 1.5 lbs beef stew meat, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 1 can diced tomatoes
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • Chopped fresh parsley, for garnish

Directions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the beef stew meat to the pot and cook until browned on all sides. Remove the meat from the pot and set aside.
  3. In the same pot, add the onion, garlic, carrots, celery, bell pepper, and zucchini. Cook until the vegetables are tender.
  4. Return the beef stew meat to the pot and add the diced tomatoes, beef broth, tomato paste, Worcestershire sauce, dried thyme, dried rosemary, bay leaf, salt, and pepper.
  5. Stir well to combine all the ingredients.
