  • 2 pounds veal stew meat, cut into chunks

  • 2 cups beef broth
  • 1 cup red wine

Directions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
  2. Season the veal stew meat with salt and pepper, then dredge in flour.
  3. Add the veal to the pot and brown on all sides. Remove from pot and set aside.
  4. In the same pot, melt the butter and add the onion, carrots, celery, and garlic. Cook until vegetables are softened.

  6. Deglaze the pot with the red wine, scraping the bottom to release any browned bits.
  7. Add the beef broth, thyme, rosemary, bay leaf, and browned veal back to the pot.

  9. Taste and adjust seasoning with salt and pepper, if needed.
