Ingredients

  • 1 lb beef stew meat, cut into small cubes
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup water
  • 1 can diced tomatoes
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 cup frozen peas
  • Fresh parsley, for garnish

Directions

  1. In a large pot, heat some oil over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.
  2. In the same pot, add the diced onion, carrots, and celery. Cook until the vegetables are tender, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute.
  4. Return the browned meat to the pot. Pour in the beef broth, water, and diced tomatoes. Add the bay leaf, dried thyme, salt, and pepper.
  5. Bring the soup to a boil, then reduce the heat to low. Cover the pot and let simmer for 30 minutes, or until the meat is tender.
  6. Stir in the frozen peas and cook for an additional 5 minutes.
  7. Remove the bay leaf and discard. Taste the soup and adjust the seasoning if needed.
