Ingredients
- 1.5 pounds beef stew meat, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 potatoes, peeled and diced
- 1 cup frozen peas
- 4 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons cornstarch
- 2 tablespoons water
- Fresh parsley, chopped (for garnish)
Directions
- Set the Instant Pot to 'Sauté' mode and heat the olive oil. Add the beef stew meat and cook until browned on all sides. Remove the meat and set aside.
- In the same Instant Pot, add the chopped onion and minced garlic. Sauté until fragrant and the onion becomes translucent.
- Add the carrots, potatoes, frozen peas, beef broth, dried thyme, dried rosemary, bay leaf, salt, and pepper to the Instant Pot. Give everything a good stir to combine.
- Place the lid on the Instant Pot and set the valve to the 'Sealing' position. Cook on 'Manual' or 'Pressure Cook' mode for 25 minutes.
- Once the cooking time is up, let the pressure release naturally for about 10 minutes. Then, carefully quick release any remaining pressure.
- In a small bowl, mix together the cornstarch and water to make a slurry. Stir the slurry into the stew to thicken the broth.
- Set the Instant Pot back to 'Sauté' mode and continue cooking for another 5 minutes, or until the stew has thickened.
- Taste the stew and adjust the seasoning with salt and pepper as needed.
- Serve the Instant Pot Beef and Vegetable Stew hot, garnished with fresh parsley.
