This Instant Pot Beef and Vegetable Stew is a classic comfort dish that combines tender beef, a medley of vegetables, and savory broth. Made in the Instant Pot pressure cooker, this stew is ready in under an hour and boasts rich flavors that will warm you up on a chilly day. Packed with protein and nutrients from the beef and vegetables, this stew is a wholesome and satisfying meal for the whole family.

Ingredients

  • 1.5 pounds beef stew meat, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 potatoes, peeled and diced
  • 1 cup frozen peas
  • 4 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Fresh parsley, chopped (for garnish)

Directions

  1. Set the Instant Pot to 'Sauté' mode and heat the olive oil. Add the beef stew meat and cook until browned on all sides. Remove the meat and set aside.
  2. In the same Instant Pot, add the chopped onion and minced garlic. Sauté until fragrant and the onion becomes translucent.
  3. Add the carrots, potatoes, frozen peas, beef broth, dried thyme, dried rosemary, bay leaf, salt, and pepper to the Instant Pot. Give everything a good stir to combine.
  4. Place the lid on the Instant Pot and set the valve to the 'Sealing' position. Cook on 'Manual' or 'Pressure Cook' mode for 25 minutes.
  5. Once the cooking time is up, let the pressure release naturally for about 10 minutes. Then, carefully quick release any remaining pressure.
  6. In a small bowl, mix together the cornstarch and water to make a slurry. Stir the slurry into the stew to thicken the broth.
  7. Set the Instant Pot back to 'Sauté' mode and continue cooking for another 5 minutes, or until the stew has thickened.
  8. Taste the stew and adjust the seasoning with salt and pepper as needed.
  9. Serve the Instant Pot Beef and Vegetable Stew hot, garnished with fresh parsley.
