Ingredients

  • For the Crust:
  • - 1 1/4 cups all-purpose flour
  • - 1/2 teaspoon salt
  • - 1/2 cup unsalted butter, cold and cubed

  • - 1 cup raw cashews
  • - 1 cup unsweetened almond milk
  • - 2 tablespoons nutritional yeast
  • - 1 tablespoon cornstarch
  • - 1 clove garlic, minced
  • - 1/2 teaspoon salt
  • - 1/4 teaspoon black pepper
  • For the Topping:
  • - 2 large carrots, peeled and grated
  • - 1 tablespoon olive oil
  • - 1/2 teaspoon ground cumin
  • - 1/4 teaspoon turmeric
  • - 1/4 teaspoon paprika
  • - Salt and pepper, to taste

Directions

  1. In a food processor, combine the all-purpose flour and salt for the crust. Add in the cold cubed butter and pulse until the mixture resembles coarse crumbs. Gradually add in the ice water, one tablespoon at a time, and pulse until the dough comes together.
  2. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C). Roll out the chilled dough on a lightly floured surface and transfer it to a greased 9-inch pie dish.
