Ingredients

  • 2 pounds beef stew meat, cut into 1-inch cubes

  • 3 celery stalks, sliced
  • 2 potatoes, peeled and cubed

  • 1 cup red wine (optional)

  • 1/2 teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons chopped fresh parsley

Directions

  1. In a large bowl, toss the beef stew meat with flour until coated.
  2. Heat the vegetable oil in a Dutch oven or large pot over medium heat.
  3. Add the coated beef to the pot and cook until browned on all sides.
  4. Remove the beef from the pot and set aside.
  5. In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent.
  6. Add the carrots, celery, and potatoes to the pot. Cook for 5 minutes, stirring occasionally.

  10. Stir in the frozen peas and cook for an additional 5 minutes.
  11. Remove the bay leaf and discard.
