Ingredients

  • 1 cup cooked quinoa
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1 cup milk
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Butter or oil for cooking

Directions

  1. In a large bowl, mix together the quinoa, flour, baking powder, and salt.
  2. In a separate bowl, whisk together the egg, milk, honey or maple syrup, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes.
  6. Repeat with the remaining batter, adding more butter or oil to the skillet as needed.
