This healthier version of Macaroni and Cheese is just as delicious as the classic, but with a healthier twist. Made with whole wheat pasta, low-fat cheese, and a creamy cauliflower sauce, this mac and cheese is lower in calories and packed with nutrients. Ingredients
- 2 cups whole wheat macaroni
- 1 small head of cauliflower, cut into florets
- 2 cups low-fat milk
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups shredded low-fat cheddar cheese
Directions
- Cook the whole wheat macaroni according to package instructions. Drain and set aside.
- Steam the cauliflower florets until tender. Drain and set aside.
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute, until bubbly.
- Gradually whisk in the milk and bring to a simmer. Cook for 2-3 minutes, until the sauce thickens.
- Add the cooked cauliflower, mustard, garlic powder, onion powder, paprika, salt, and black pepper to the saucepan. Use an immersion blender or a regular blender to puree the sauce until smooth.
- Return the sauce to low heat and stir in the shredded cheddar cheese until melted and smooth.
- Add the cooked macaroni to the sauce and stir until well coated.
- Serve the macaroni and cheese hot, garnished with additional shredded cheese if desired.
