This healthier version of Macaroni and Cheese is just as delicious as the classic, but with a healthier twist. Made with whole wheat pasta, low-fat cheese, and a creamy cauliflower sauce, this mac and cheese is lower in calories and packed with nutrients. Ingredients

  • 2 cups whole wheat macaroni
  • 1 small head of cauliflower, cut into florets
  • 2 cups low-fat milk
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded low-fat cheddar cheese

Directions

  1. Cook the whole wheat macaroni according to package instructions. Drain and set aside.
  2. Steam the cauliflower florets until tender. Drain and set aside.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute, until bubbly.
  4. Gradually whisk in the milk and bring to a simmer. Cook for 2-3 minutes, until the sauce thickens.
  5. Add the cooked cauliflower, mustard, garlic powder, onion powder, paprika, salt, and black pepper to the saucepan. Use an immersion blender or a regular blender to puree the sauce until smooth.
  6. Return the sauce to low heat and stir in the shredded cheddar cheese until melted and smooth.
  7. Add the cooked macaroni to the sauce and stir until well coated.
  8. Serve the macaroni and cheese hot, garnished with additional shredded cheese if desired.
