Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup vegetable broth
  • 1 cup uncooked white rice
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 cup shredded cheddar cheese

Directions

  1. Preheat oven to 375 degrees F.
  2. In a large skillet, heat oil over medium-high heat.
  3. Add ground turkey and cook for 5 minutes, breaking up with a spoon, until no pink remains.
  4. Add onion, bell pepper, garlic, oregano, basil, salt and pepper, and cook for 5 minutes or until vegetables are softened.
  5. Add broth, rice and tomatoes, and bring to a simmer.
  6. Reduce heat to low and cover. Simmer for 15 minutes or until rice is cooked through.
  7. Pour mixture into a 9x13-inch baking dish and top with cheese.
  8. Bake for 10 minutes or until cheese is melted and bubbly.
