Directions
- In a medium bowl, whisk together the pineapple juice, olive oil, lime juice, garlic, ginger, smoked paprika, salt, and pepper. Place the chicken breasts in the marinade, and let marinate for 15 minutes, or up to 8 hours.
- Heat a grill to medium-high heat.
- Grill the chicken breasts for 6-8 minutes per side, or until cooked through.
- Grill the pineapple wedges for 2-3 minutes per side, or until lightly charred.
- Serve the chicken breasts with the pineapple wedges.
