Roll dough into 1 inch balls, and roll them in the remaining 1/4 cup of sugar. Place 2 inches apart on the prepared cookie sheets. Bake for 8 to 10 minutes in the preheated oven, or until light and golden.
Let cookies cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
