Ingredients
- 1 cucumber, peeled and seeded
- 1/2 teaspoon salt
- 1 cup plain Greek yogurt
- 2 cloves garlic, pressed
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh dill
Directions
- Grate the cucumber on the large holes of a box grater and place in a strainer over a bowl.
- Sprinkle the cucumber with salt and let it drain for 10 minutes.
- Press the cucumber to remove any excess liquid.
- In a medium bowl, combine the cucumber, yogurt, garlic, olive oil, lemon juice, and dill.
- Stir until combined and season with additional salt and pepper, to taste.
- Serve with vegetables or pita bread.
