Ingredients

  • 1 cucumber, peeled and seeded
  • 1/2 teaspoon salt
  • 1 cup plain Greek yogurt
  • 2 cloves garlic, pressed
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill

Directions

  1. Grate the cucumber on the large holes of a box grater and place in a strainer over a bowl.
  2. Sprinkle the cucumber with salt and let it drain for 10 minutes.
  3. Press the cucumber to remove any excess liquid.
  4. In a medium bowl, combine the cucumber, yogurt, garlic, olive oil, lemon juice, and dill.
  5. Stir until combined and season with additional salt and pepper, to taste.
  6. Serve with vegetables or pita bread.
