- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 3/4 cup butter, softened
- 1/2 cup orange juice
- 1/4 teaspoon orange zest
- 1/4 cup raisins
- 2 tablespoons apricot jam, melted and cooled
Directions
- Preheat the oven to 350°F (175°C). Grease an 8-inch (20 cm) round cake pan.
- In a medium bowl, mix together the flour, baking powder, salt, and sugar.
- In a separate bowl, cream the butter until light and fluffy. Beat in the orange juice, orange zest, and raisins.
- Add the dry ingredients to the wet ingredients and stir until just combined.
- Spread the batter into the prepared pan. Drizzle with the melted apricot jam.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan before turning out onto a cake plate. Serve warm or at room temperature.
