1 lb boneless, skinless chicken breasts or thighs, cut into 1 inch cubes
2 tablespoons vegetable oil
1 onion, diced
3 garlic cloves, minced
1 tablespoon fresh ginger, grated
2 tablespoons garam masala
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon chili powder
1 cup tomato sauce
1/2 cup cream
Salt and pepper to taste
Fresh cilantro for garnish
Directions
In a large bowl, mix together the chicken cubes, oil, onion, garlic, ginger, garam masala, cumin, coriander, chili powder, and salt and pepper. Toss to evenly coat the chicken. Allow to marinate for at least 20 minutes.
Heat a large skillet over medium-high heat. Add the chicken and marinade to the skillet and cook for 8-10 minutes, stirring occasionally, until the chicken is cooked through.
Add the tomato sauce, cream, and a pinch of salt and pepper. Bring to a boil, then reduce the heat to low and simmer for 10 minutes.
Serve with basmati rice, naan bread, and garnish with fresh cilantro.
