Ingredients

  • 4 strips bacon
  • 1 cup almond flour
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon melted coconut oil
  • 1/4 cup almond milk

Directions

  1. Cook bacon in a skillet over medium heat until crisp. Remove and set aside.
  2. In a medium bowl, combine almond flour, eggs, baking powder, salt, and pepper. Mix until combined.
  3. Stir in melted coconut oil and almond milk until combined.
  4. Heat a non-stick skillet over medium heat and add 1/4 cup of the batter for each pancake.
  5. Cook for 2-3 minutes per side, until golden brown. Flip and cook for an additional 2-3 minutes.
  6. Serve with cooked bacon and your favorite topping.
