Ingredients
- 4 strips bacon
- 1 cup almond flour
- 2 large eggs
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 tablespoon melted coconut oil
- 1/4 cup almond milk
Directions
- Cook bacon in a skillet over medium heat until crisp. Remove and set aside.
- In a medium bowl, combine almond flour, eggs, baking powder, salt, and pepper. Mix until combined.
- Stir in melted coconut oil and almond milk until combined.
- Heat a non-stick skillet over medium heat and add 1/4 cup of the batter for each pancake.
- Cook for 2-3 minutes per side, until golden brown. Flip and cook for an additional 2-3 minutes.
- Serve with cooked bacon and your favorite topping.
