Ingredients

  • 2 cups almond flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup melted coconut oil
  • 1/2 cup coconut sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/2 cup dark chocolate chips

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, whisk together almond flour, baking soda, and salt.
  3. In a large bowl, stir together melted coconut oil, coconut sugar, vanilla extract, and egg until combined.
  4. Stir in almond flour mixture until dough forms.
  5. Fold in chocolate chips.
  6. Drop dough by the tablespoonfuls onto ungreased baking sheets, spacing the cookies 2 inches apart.
  7. Bake in preheated oven for 10 to 12 minutes, or until cookies are lightly golden.
  8. Allow cookies to cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
