Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 3 carrots, peeled and diced
  • 1 large onion, peeled and diced
  • 1 red bell pepper, seeded and diced
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Directions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine the sweet potatoes, carrots, onion, bell pepper, garlic, olive oil, sea salt, and black pepper. Mix until everything is evenly coated.
  3. Spread the vegetables onto a large baking sheet and bake for 25-30 minutes, stirring once halfway through, until the vegetables are fork-tender and lightly browned.
  4. Remove from the oven and sprinkle with chopped parsley. Serve immediately.
