Ingredients

  • 1 lb spaghetti
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 head cauliflower, chopped into florets
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup grated Parmesan cheese

Directions

  1. Bring a large pot of salted water to a boil and add the spaghetti. Cook according to the package instructions.
  2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic and sauté for 1 minute.
  3. Add the cauliflower and sauté for 3-4 minutes, until lightly browned.
  4. Add the vegetable broth and bring to a boil. Reduce the heat and simmer for 10 minutes, until the cauliflower is tender.
  5. Add the cream, salt, and pepper, and simmer for another 5 minutes.
  6. Drain the cooked spaghetti and add it to the skillet. Stir to combine and cook for 1 more minute.
  7. Sprinkle the Parmesan cheese over the top and serve.
