Ingredients
1 lb spaghetti
2 tablespoons olive oil
3 cloves garlic, minced
1 head cauliflower, chopped into florets
1 cup vegetable broth
1/2 cup heavy cream
1/2 teaspoon salt

1/2 cup grated Parmesan cheese
Directions
Bring a large pot of salted water to a boil and add the spaghetti. Cook according to the package instructions.
Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic and sauté for 1 minute.
Add the cauliflower and sauté for 3-4 minutes, until lightly browned.
Add the vegetable broth and bring to a boil. Reduce the heat and simmer for 10 minutes, until the cauliflower is tender.
Add the cream, salt, and pepper, and simmer for another 5 minutes.
Drain the cooked spaghetti and add it to the skillet. Stir to combine and cook for 1 more minute.
Sprinkle the Parmesan cheese over the top and serve.
