Ingredients
- 1 package of spring roll wrappers
- 3 cups of thinly sliced fresh fruit (such as mango, pineapple, papaya, and kiwi)
- 2 tablespoons of sugar
- 1 teaspoon of cornstarch
- 1/4 teaspoon of ground cinnamon
- 1/4 teaspoon of ground nutmeg
- 1/4 teaspoon of ground ginger
- 1/4 cup of vegetable oil
- Honey for dipping (optional)
Directions
- In a medium bowl, combine the fruit, sugar, cornstarch, cinnamon, nutmeg, and ginger. Mix until the fruit is evenly coated.
- Lay out a spring roll wrapper and place about 2 tablespoons of the fruit mixture in the center. Fold the wrapper over the fruit and roll it tightly, making sure to tuck in the sides.
- Repeat with the remaining wrappers and fruit mixture.
- Heat the oil in a large skillet over medium heat. Fry the spring rolls, a few at a time, until they are golden brown and crunchy, about 3 minutes per side.
- Serve the spring rolls with honey for dipping, if desired.
