Ingredients

  • 1 package of spring roll wrappers
  • 3 cups of thinly sliced fresh fruit (such as mango, pineapple, papaya, and kiwi)
  • 2 tablespoons of sugar
  • 1 teaspoon of cornstarch
  • 1/4 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of ground ginger
  • 1/4 cup of vegetable oil
  • Honey for dipping (optional)

Directions

  1. In a medium bowl, combine the fruit, sugar, cornstarch, cinnamon, nutmeg, and ginger. Mix until the fruit is evenly coated.
  2. Lay out a spring roll wrapper and place about 2 tablespoons of the fruit mixture in the center. Fold the wrapper over the fruit and roll it tightly, making sure to tuck in the sides.
  3. Repeat with the remaining wrappers and fruit mixture.
  4. Heat the oil in a large skillet over medium heat. Fry the spring rolls, a few at a time, until they are golden brown and crunchy, about 3 minutes per side.
  5. Serve the spring rolls with honey for dipping, if desired.
